For SOP Documents , if want to generate and download them – what are file formats are supported?

Word & PDF are supported.

You can restrict users from generating word versions by changing the BOOK_FORCE_PDF setting to TRUE within the Advanced tab in the Admin section and then users can only generate DOCS in all modules in PDF format.
